The two things our chef reaches for every service

One bottle of Noor Fès organic extra virgin olive oil from the hills around Fès, and one pouch of our own ras el hanout. Together they are the base of almost everything we cook at Nieuwe Markt 8 in Zwolle.

What is in the set

• Noor Fès organic extra virgin olive oil, 500 ml. Moroccan Picholine, hand harvested, cold pressed within hours of picking.
• La Sqala ras el hanout, 100 g. Warm and layered, with a little sweetness and a floral note. This is the mix that goes into nearly every tajine in our kitchen.

Why they belong together

The oil finishes a dish, the spice starts it. Fry onion in the oil, add a spoonful of ras el hanout, and you have the smell of our kitchen in your own house. Over roasted vegetables: a spoon of oil, a pinch of the mix, salt. That is the whole recipe.
