In about ninety seconds you see the orchards near Fès, the Picholine olives picked from the branch by hand, and what happens to them next. No stock footage: this is the estate itself.

Why this bottle costs € 56

We do not sell litres. We sell the last drizzle.

A supermarket bottle costs a few euros and is made for frying. This oil is for the moment after: the drizzle over grilled vegetables, through couscous, over warm bread. Half a teaspoon is enough, and that is exactly where you taste the difference.

With normal use a 500 ml bottle lasts for months. Do the maths: that is a few tens of euros for a whole season in which every dish gets better.

Harvested by hand

Family orchards in the hills near Fès, on the Saïs plain. Picholine olives, picked by hand rather than shaken from the tree by machine.

Pressed within hours

Cold pressed within a few hours of harvest. That is the whole secret: the shorter the time between tree and press, the less the oil loses.

Bottled at the estate

Produced and bottled at the Noor Fès estate itself. No middlemen blending oils from different origins.

How it tastes

Full and fruity, with a soft pepper in the finish

First fruit and a green, grassy note. Then a herbal layer underneath, and right at the end a soft pepperiness that lingers in the throat. That tickle is not a fault: it is polyphenol, and it means the oil is fresh.

What you will not get: the flat, greasy taste of oil that has sat on a shelf for too long.

Four moments where you taste the difference straight away

Grilled vegetables with lemon
Over grilled vegetables

Straight off the grill, a drizzle over them while they are still hot. The oil picks up the smoke.

Zaalouk, hummus, tapenade. A well in the middle, oil in it, bread through it.

Through the couscous

Loosened with a fork and a drizzle of oil. That keeps the grains separate and glossy.

Just before serving, with the lid only just off. Do not cook it in, that drives the aroma off.

Dark green glass with gold calligraphy, a gold cap with a medallion, and its own box. Anyone unwrapping this knows at once it is not groceries.

That is why this is our most requested gift: a host gift, a thank you for a colleague, or something for the person who has everything but likes to cook. The dark glass protects the oil from light, so the bottle is not only handsome but useful.

Before you order

Can I fry with it?
The smoke point is around 190 degrees, so technically you can fry with it at low to medium heat. We would not. Heating drives off exactly the aroma you are paying for. Use an ordinary olive oil for that, and keep this one for the last drizzle.
How long does a 500 ml bottle last?
Used as intended, as a finishing oil, 500 ml will last you several months. Once opened we advise finishing it within about three months, when it is at its best.
Why is 500 ml so much better value?
Two 250 ml bottles cost € 80. For € 56 you get the same quantity in one bottle. The 250 ml is mainly there to try it out or as a small gift.
Is this oil halal?
Olive oil contains no animal ingredients and no alcohol, so there is nothing standing in the way.
What does shipping cost?
€ 4.95 within the Netherlands, dispatched on working days. You can also collect the bottle free of charge at our restaurant at Nieuwe Markt 8 in Zwolle. Choose that at checkout.
Can you gift wrap it?
The bottle comes in its own box, so wrapping is not needed. If you would like a card with it, add it to the notes with your order or email us at shop@lasqala.nl.
Can I return it?
An unopened bottle can be returned within 14 days. Opened is not possible; food products may not be returned.
